Zoodles are amazing. If you haven’t tried them yet I highly recommend them. And what better way to try something new than smothering it in butter and garlic?! I mean, you really can’t go wrong there.
I’m going to share with you the recipe that I tried tonight and will definitely be making again! Don’t worry, I’ll skip the whole pre-recipe sob story that people always share first. You know what I’m talking about, you scroll and scroll and scroll and they’re STILL going on about how Jim and Suzie are the pickiest eaters ever but this changed their life and now they love vegetables, blah blah blah.
Shrimp scampi is one of my favorite dishes so when I found a recipe for it made with zoodles I knew I have to try it. The end result was pretty
and delicious!
Here is the original recipe that I found and for the most part followed.
I made a few changes- I didn’t have a shallot so I just used an onion I had on hand. When things are in teaspoons I don’t bother measuring and just kinda shake it on in there. So I’m not sure how much red pepper I used, and I used a heaping tablespoon of garlic-that’s about 1 1/2 right? You can never go wrong with garlic.
The biggest thing was I bought frozen shrimp that was already cooked. It will save you a ton of time if you don’t have to peel and de-vein shrimp. I thawed them out and threw them in the skillet at the very end, just long enough to heat them through, but not too long so they wouldn’t get rubbery!
If you are cooking for yourself and want leftovers, I found that 3 zucchini was enough to make me 3 servings. If not, 3-4 would probably be enough for a small family! Try out the recipe and share how it went! Or if you know another good zoodle recipe, let me know so I can try it!
